Italian Rice Salad - Insalata di Riso
1 cup of Unico Aborio Rice
2 hot dogs cooked and sliced
1/2 cup cubed cheddar cheese
1/2 cup Valli eggplant in oil
1/2 cup pickled onions
1/4 cup roasted red peppers
1/4 cup sun-dried tomatoes in oil
1 tbsp chopped fresh parsley
Bertolli olive oil
Method:
Cook rice until al dente, rinse and set aside. In a bowl combine hotdogs, cheddar, eggplant, onions, peppers, sun-dried tomatoes and parsley. Add rice and mix all ingredients together. Depending on how much oil was used from the eggplant and sun-dried tomatoes, you may have to add a bit of olive oil.
