Biscotti - Pezzette e Cannella (Cocoa and Cinnamon Cookies)
Today I visited with my parents and ended up making Pezzette e Cannella cookies with my mom, they are delicious. Here is how they are made.
Ingredients:
4 cups flour
1 1/2 cups sugar
5 spoons Fry's Pure Cocoa
1/4 cup cinnamon
5 eggs
2 spoons baking powder
1/2 grated lemon
1 tsp vanilla
milk as required
Method:
Sift dry ingredients into bowl and add remaining ingredients. Mix together in Kitchen Aide mixer until dough forms a ball but should not be dry or sticky, if dry please add a bit of milk at this point. Dust flat surface with flour and place dough on top. Cut dough into six pieces and let stand for 10 minutes. Take one of the six pieces of dough and roll into tubular strips. Cut into 1 inch diagonal pieces and place on parchment paper in baking sheet, repeat for the next 5 pieces.
Bake cookies for 20 minutes at 350 and let cool completely.
Icing:
Ingredients:
2 cups icing sugar
2 egg whites
1 tsp lemon juice
Method:
Blend all ingredients with hand mixer until icing has thickened.
Once cookies have cooled down, place them a large bowl and pour icing over top. Stir in the icing until the cookies are fully coated. Remove from bowl and place on flat surface until icing is set. Serve cookies with some Disaronno Liqueur. ENJOY, hope you like them!
