Rigatoni and Zucchini with Romano Cheese
While vacationing in Italy we had the pleasure of tasting this wonderful, easy to prepare pasta dish. It is a meatless dish that is perfect for lunch or dinner. When making simple recipes as this one, it is important to have fresh ingredients which will provide an optimum taste. I hope you enjoy this simple dish.
Ingredients:
1 small zucchini sliced
250 g Barilla Rigatoni
1/2 diced red onion
2 tbsp Bertolli Olive oil
2-3 basil leaves
1/2 cup grated Tre Stelle Romano Cheese
Salt and pepper to taste
Method:
Heat olive oil and cook onion until golden. Add zucchini, salt and pepper, cook until zucchini is softened and has a bit of color. Add basil leaves, stir and remove from heat.
In the meantime, cook rigatoni in salted water as per package. Drain and add zucchini mixture, 1/2 of the cheese and a little more pepper. Plate and sprinkle remaining cheese over top.
