Blueberry Lemon Muffins


These muffins are irresistible. They are filled with blueberries, lemon zest and have a touch of cinnamon for a bit of added spice.

Ingredients:

2 1/2 cups flour
1 tbsp Magic baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 egg
1 1/4 cups of milk
1/3 cup Capri vegetable oil
1/3 cup Billy Bee Honey
2 tsp grated lemon zest
1 1/2 cups blueberries

Method:

Combine flour, baking powder, salt and cinnamon. In a separate bowl combine egg, milk, oil, honey and lemon zest. Add dry ingredients just until the dry ingredients are moistened. Fold in blueberries and spoon batter into prepared muffin pan. Bake at 400 for 20 - 25 minutes.

Makes 12 muffins
