Chocolate Valentine Cupcakes

Happy Valentines Day Everyone!

How can you go wrong with chocolate!
Made these Chocolate cupcakes with the kids today, enjoy!


Preparation time: 15 minutes
Baking time: 30 - 35 minutes
Yield: Makes about a dozen depending on how large your cupcake tins are

Ingredients:

Cupcakes:

2 1/4 cups of flour
2 tsp Arm and Hammer baking soda
1/2 tsp salt
1/2 cup softened butter
2 1/4 cups brown sugar
3 eggs
1 1/2 tsp vanilla
3 squares Bakers unsweetened melted chocolate
1 cup sour cream
1 cup boiling water

Icing:

1/2 cup softened butter
3 - 3 1/2 cups confectioners sugar
1/2 cup light cream
If making chocolate icing, add 2 squares of cooled melted chocolate

Method:

Mix flour, baking soda and salt. In a separate bowl, cream butter, sugar and eggs until light and creamy. Beat in vanilla and melted chocolate. Add dry ingredients alternating with sour cream. Stir in boiling water and pour into cupcake tins. Bake for 30 to 35 minutes or until took pick inserted comes clean. Cool for 10 minutes and then remove from tins. Once fully cooled, decorate to your liking.
