Mixed Bean Soup
This is a recipe that is filled with different types of beans that are flavored with onions, garlic and a few other delicious ingredients.
Ingredients:
1 cup dried mixed beans
4 cups water
3 diced stalks celery
2 minced cloves of garlic
1/2 diced red onion
2 heaping tbsp of Unico crushed tomatoes
1 tbsp Knorr Bouillon Vegetable Instant stock mix
2 tbsp Bertolli Olive oil
Salt and Pepper to taste
Method:
Soak beans overnight in a pot with 2 cups of water. Drain beans, rinse and set aside. In a pot cook onions, garlic and celery until transluscent. Add beans and cook for a few minutes longer. Add 2 cups of water, stock mix, crushed tomatoes and salt and pepper. Bring to a boil and reduce heat to minimum and let cook for about 45 minutes until beans are tender. If desired, this soup can be served with rice or crusty bread.
