Penne Pasta with Broccoli


Broccoli, also known as "Brassica Oleracea",  is a plant that comes from the cabbage family. The word broccoli refers to the italian word "broccolo", which means "flower top of a cabbage".


I remember eating pasta with broccoli as a child, smelling the broccoli cooking and the anchovies that my mother would add in the end. For todays recipe, I have made it similar to my mother's, however I replaced the anchioves with pancetta, an absolute delicious combination. Here is how this recipe is made.


Ingredients:


500 g Barilla Penne Pasta
1 1/2 - 2 cups of broccoli florets
1/2 cup chopped Mastro Pancetta
1/2 red onion minced
2 tbsp Bertolli Olive oil
Salt and pepper 


Method:


Brown onions and pancetta with olive oil in a skillet until onions become translucent. Cook penne in salted water according to the package directions. When pasta is almost ready, add broccoli florets and cook together for a few minutes. Drain pasta and broccoli and add to skillet with the onions and pancetta. Add pepper toss and serve.


Serves 4 - 5
