Potato Croquettes
Croquettes are made in many different variations and in many different countries. In Brazil they are made with beef, in China they are made with sweet potato, in Mexico they are made with tuna or chicken, and in Italy, they are made with potatoes. However these are just a few examples. Croquettes are usually shaped into a cylinder and then fried. The recipe I am sharing today are made with yellow flesh potatoes which are best because they hold together well.
Ingredients:
10 small yellow flesh potatoes peeled and mashed
3 eggs
1/2 cup flouer
1 cup bread crumbs
1 cup Parmigiano Reggiano cheese
1 tbsp chopped fresh parsley
1/2 tsp garlic powder
Salt and pepper to taste
Capri Vegetable oil for frying
Method:
In a bowl, add mashed potatoes, 1 egg, 1/2 cup bread crumbs, cheese, parsley, garlic powder, salt and pepper. Mix all ingredients and form 2 inch long cylinders and set aside. Beat remaining eggs with a sprinkle of salt and pepper. Dip potato cylinders in flour, then egg mixture and then bread crumbs. Repeat until all potato cylinders are coated. Heat oil and fry until golden, turning over in between. Serve plain or with dip of your choice.
