Rice Patties
These Rice Patties are a great way to use left over rice, and in tonight's case, left over meatballs too. Just by adding a few ingredients to the rice makes a great addition to any meal.
Ingredients:
1 cup cooked Unico Arborio rice
3 minced meatballs in sauce
4 eggs
1 cup bread crumbs
1/2 cup Divella Semolina flour
1 cup grated Tre Stelle Piave Vecchio cheese
1 tbsp chopped parsley
1 minced garlic clove
Salt and pepper to taste
Capri vegetable oil for frying
Method:
In a bowl mix rice, minced meatballs, 2 eggs, 1/2 cup bread crumbs, 1/2 cup grated cheese, parsley, garlic and salt and pepper. Beat remaining eggs and add salt and pepper. In a separate bowl mix remaining bread crumbs, semolina flour and remaining cheese.
Shape rice mixture into 1 inch balls and flatten. Dip into egg mixture and then into bread crumb mixture. Fry in oil until golden brown turning over in between. Serve with sauce of your choice, I served them with tomato sauce.
