Spinach and Cremini Mushroom Risotto
Risotto is a rice dish that is cooked to a creamy consistency with broth. There are many different ways to make risotto which is the most common way of cooking rice in Italy. For todays recipe, I used aborio rice, spinach and cremini mushrooms.
Ingredients:
1 1/2 cups of Unico Aborio rice
2 cups chopped spinach
1 cup sliced mushrooms
2 cans Campbells Beef broth
2 cans water
3 minced green onions
2 cloves of minced garlic
1/2 cup Parmigiano Reggiano cheese
1/4 cup white wine
2 tbsp Bertolli olive oil
1 tbsp butter
Sprinkle of parsley
Pepper to taste
Method:
Heat broth and water and keep heated on minimum heat. In another pan, brown together onions, garlic, spinach and mushrooms and let cook on medium heat for a few minutes. Add rice and cook for a few more minutes. Add white wine and let evaporate. Add a bit of the broth cover and cook. Keep adding broth until rice is fully cooked. Add butter and some of the cheese. Serve with extra cheese and a sprinkle of parsley.
