Broccoli Tenders with Dijon Vinaigrette
Broccoli Tenders, Broccolini in Italian, are similar to broccoli but have long finer stems and smaller florets. Broccolini are a rather delicate vegetable that can be steamed, boiled or sauteed. This recipe is perfect as a side or even for lunch, together with a piece of crusty bread.
Ingredients:
680 g Broccoli Tenders
1 tbsp Dijon Mustard
1 minced clove garlic
2 tbsp balsamic vinegar
1/4 cup of olive oil
Drizzle of lemon juice
Salt and pepper to taste
Method:
Cook broccolini in salted water until stems feel tender. In the meantime, mix together dijon mustard, garlic, balsamic vinegar, olive oil, salt and pepper. Drain broccolini and let stand for 5 minutes so that there is no water remaining. Place broccolini in serving dish, dress with vinaigrette, toss and serve with a drizzle of lemon.
