Cauliflower Soup
This is a quick and easy recipe that is very warming on a cold winter day. It is creamy and amazingly delicious.
Ingredients:
1 whole chopped cauliflower
1 tbsp Bertolli olive oil
1 minced clove of garlic
Pinch of Clubhouse nutmeg
1/2 chopped white onion
1 tbsp Knorr vegetable broth mix
3 cups of water
1/2 cup milk
Sprinkle of parsley
Sprinkle of grated cheddar cheese
Salt and pepper to taste
Method:
Cook cauliflower, onion and garlic in olive oil until onion becomes translucent. Add water, vegetable broth mix, nutmeg, salt and pepper. Bring to a boil, reduce heat, and cook for about 20 minutes. Remove from heat and place in blender, blend until a smooth mixture is received. Place soup back in pot and add 1/2 cup of milk. Heat for few minutes longer and serve topped with grated cheese and parsley.
Serves 5 - 6
