Italian Meatloaf with Hard Boiled Eggs
This is my mother's recipe for meatloaf. It is a wonderful dish with a surprise in the middle, hard boiled eggs.
Ingredients:
500 g ground veal
1/2 cup breadcrumbs
3/4 cup grated parmigiano cheese
3 tbsp cooked tomato sauce
1/4 cup water
5 eggs
1 minced clove garlic
4 slices of thinly sliced pancetta
4 slices swiss cheese
2 tbsp minced parsley
Salt and pepper to taste
Method:
In a pot, boil 4 eggs for about 10 minutes, remove and let cool. Mix veal, breadcrumbs, cheese, 1 egg, garlic, 1 tbsp parsley, salt and pepper and divide mixture in half. In a casserole dish, flatten half of the veal mixture and shape into a long oval, less than a half inch thick. Peel eggs and place on veal. Sprinkle remaining parsley over eggs and top with pancetta and swiss cheese. Flatten the other half of the veal over the eggs forming an oval log and ensure that there are no cracks. Place tomato sauce over top, add 1/4 cup of water to the casserole dish and cook at 375 for about 1 1/2 to 2 hours. Cool for 10 minutes, slice and serve.
