Orecchiette Pasta with Ricotta Cheese
Ricotta is a very versatile cheese that can be used in many recipes that are sweet or savory. It can be used together with meat, vegetables, pasta or even in deserts. For todays simple recipe, I paired it with orecchiette pasta.
Ingredients:
1 1/2 - 2 cups orecchiette pasta
1 - 1 1/2 cups ricotta cheese
Salt to taste
Method:
Bring salted water to boil and cook orecchiette according to package. In the meantime, place ricotta in a bowl, add 3 tbsp of the water that the orecchiette are cooking in. Blend with a hand blender until creamy. Drain orecchiette, add ricotta mixture, stir until all are coated with the ricotta mixture and serve.
Serves 2
