Sole au Gratin
Gratin based dishes are such an elegant and flavourful way to prepare fish. Most gratin recipes use a white sauce and cheeses such as mozzarella and swiss, I used cheddar this time. As always my family really enjoyed this recipe.
Ingredients:
4 sole filets
1 tbsp chopped parsley
3 small tomatoes diced
2 minced cloves garlic
6 sliced mushrooms
1/2 cup white wine
1 cup water
2-3 tbsp butter
2 tbsp flour
3/4 cup grated cheddar cheese
Salt and pepper to taste
Method:
Lightly grease frying pan with a bit of butter. Add sole, parsley, tomatoes, garlic, mushrooms, salt and pepper. Add wine and water, cover and bring to a boil. Turn fish, remove from heat and let stand for a few minutes. Remove fish and vegetables and place in a bowl. Remove liquid and store in another bowl. Add butter to pan, add flour and stir. Add sauce back in and let cook on medium heat until thickened. Place fish and vegetables in scallop shell. Pour sauce and top with cheese and a sprinkle of parsley. Broil in oven until cheese is melted.
