Blueberry and Almond Biscotti
Biscotti, oh how wonderful they are. These biscotti are very flavourful and crunchy too. Perfect paired with an espresso coffee or cappuccino.
Ingredients:
2 1/4 cups flour
3/4 tsp salt
1 1/2 tsp baking powder
90 g margarine
2 eggs
3/4 cup sugar
1 tbsp lemon zest
2 tsp vanilla
55 g slivered almonds
1 cup blueberries
Method:
Place flour, salt and baking powder in a bowl, mix together and set aside. In a stand up mixer, cream margarine and sugar. Add eggs one at a time and continue mixing. Add lemon zest and vanilla. Add flour a little at a time and mix until dough is formed. Mix in blueberries and almonds. Remove from bowl and place on floured flat surface. Cut dough in half and roll each piece into a 1 1/2 inch cylinder. Place on parchment paper in a cookie sheet and bake at 325 for about 30 minutes. Remove from oven and let cool for 10 minutes.
Cut cylinders making diagonal pieces about 1/2 inch thick and place on sides in an unprepared pan. Bake for 10 minutes on each side.
