Roasted Pepper and Artichoke Salad


This roasted pepper and artichoke salad is one of our summer favourites. It is a simple to make salad recipe that is great when paired with other BBQ dishes...and don't forget the bread for dipping.

Ingredients:

5 peppers roasted and peeled
1 can of artichokes
1/2 cup sliced black olives
1 tbsp capers
2 minced garlic cloves
1 tbsp chopped parsley
3 tbsp olive oil
1 - 2 tbsp balsamic vinegar
Salt and pepper to taste

Method:

Slice peppers lengthwise and set aside in a bowl. Cut artichokes in half and place in a frying pan with a bit of olive oil and brown both sides. Add artichokes, olives, capers, garlic, oil, vinegar, salt and pepper. Toss and serve. This salad can be served hot or cold and tastes even better the next day.

Serves 4 - 5
