Yukon Gold Potato Skins
I used the Yukon Gold potato for this recipe as the skin is thin and delicate, and is pleasurable to eat unlike the skin of other types of potatoes. The taste of these potato skins was even better as they were cooked on the BBQ.
Ingredients:
5 medium sized potatoes
6 bacon slices cooked and diced
1 cup grated mozzarella cheese
3 tbsp minced green onion
3 tbsp sliced black olives
1 tsp chili powder
2 tbsp olive oil
salt and pepper to taste
Method:
Wash potatoes and poke with fork. Place in microwave and cook until tender, about 10 minutes. Let stand for a few minutes. Cut potatoes in quarters and scoop out flesh. Combine oil, chill powder, salt and pepper and coat potatoes. Place on BBQ and cook on both sides. Add bacon, onion, olives and cheese and cook for a few more minutes on BBQ until mozzarella has melted. Serve with your favourite dip or sour cream.
