Lupini Beans
Lupini come from the family of peas and are typically eaten as a snack which make for a healthier alternative. The long process of preparing the beans is well worth the wait.
Ingredients:
1/2 kg dry lupini beans
Salt
Water
Olive oil
Salt and pepper to taste
Method:
Rinse lupini and discard any dark or unusual lupine beans. Place in a large bowl or pot and fill with water, covering the beans completely. Cover with lid and let soak for about 12 hours. Remove water rinse and replace water, cover with a lid and add about an inch or two more of water. Bring to a boil and let cook on minimum heat for about 1 hour.
Remove water and rinse beans well. Cover with fresh water and add about 1 tbsp of salt, cover with tea towel. Repeat this process until the beans are no longer bitter, for about 5 - 6 days.
Remove water before serving, add a bit of olive oil and some salt and pepper to taste, other spices of your preference may be added. Please note that lupini beans have an outer peal that is easily removed by squeezing the bean between your fingers.
