Tortellini with Pesto Sauce
This is one of the simpler pasta recipes that is ideal for the summer but can be made anytime of the year. I made this tonight with my freshly picked basil and parsley...it was absolutely amazing.
Ingredients:
1 cup basil
1/2 cup parsley
1/4 cup pine nuts
3 tbsp olive oil
1/2 cup grated Pamigiano Reggiano cheese
1 pkg. 3 cheese tortellini
Salt and pepper to taste
Method:
Place water to boil in large pot. Place all ingredients in blender and blend until smooth. Cook tortellini according to package. Once tortellini are al dente remove and drain all water. Place pesto sauce over tortellini and stir until coated. Serve with a sprinkle of Parmigiano Reggiano cheese.
