Quinoa Egg Muffins


I made these Egg Muffins today that include the wonderful gluten free grain-like...Quinoa. This is a recipe that is quick to make and is great served for breakfast, lunch or dinner.

Ingredients:

3/4 cup Quinoa
1 cup Grated Zucchini
1/2 cup Bacon
1 cup Grated Cheddar Cheese
5 Eggs
1 tbsp Parsley
Salt & Pepper to taste

Method:

Cook Quinoa according to package. In the meantime, combine zucchini, bacon, cheese, eggs, parsley, salt and pepper. Add Quinoa to mixture and spoon into greased six portion muffin pan. Cook for 20-25 minutes until golden. Let stand 5 minutes, remove muffins from pan and serve.

Serves 6
