Tomato & Basil BBQ Chicken
Ingredients:
4 - 6 chicken breasts
1 cup cherry tomatoes
2 tbsp. sun dried tomatoes
1/4 cup fresh basil leaves
1 tsp. minced garlic
1/4 cup red wine vinegar
Water as required
Method:
Place all ingredients into blender and blend so that tomatoes are not chunky. Depending on thickness of marinade preferred, a bit of water can be added to the mixture. Poor over chicken and refrigerate for 1 - 3 hours.
Preheat BBQ and cook chicken for about 20 - 25 minutes turning occasionally to form criss cross marks.
