BBQ Sweet and Spicy Pork


The inspiration for this recipe was from a lunch that I attended this week with coworkers at Padmanadi Vegetarian Restaurant. Although my recipe is inspired from that delicious lunch I had, it is not vegetarian. Along with BBQ Spicy Pork, I also made Coconut rice as a side dish.



Ingredients BBQ Spicy Pork:

3/4 pound pork tenderloin
1/4 cup Heinz Ketchup
2 tbsp Unico Red Wine Vinegar
2 tbsp Bertolli Olive oil
1/4 cup BBQ sauce
1/4 cup tomato sauce
3 cloves garlic minced
1/2 cup chopped white onion
1/2 cup chopped broccoli
1/2 cup chopped cauliflower
1/2 cup green beans
1/4 cup thinly sliced carrot
1/2 - 1 tsp Clubhouse hot pepper flakes
1/3 cup of water as needed

Method:

Cut pork into 1 inch strips, place in pan with olive oil and brown. Once browned add vinegar and cook for a few minutes longer. Add onion, garlic, broccoli, cauliflower, green beans and carrots, stir and cook for a few minutes. Add ketchup, BBQ sauce, tomato sauce, water and hot pepper flakes. Cook on medium heat for about ten minutes adding more water if necessary.

Ingredients Coconut Rice:

1 1/2cups white rice
2 cans of coconut milk
salt to taste

Method:

In a saucepan, combine rice, coconut milk and salt. Bring to a boil on high heat. Reduce heat medium to low, cover and cook for about 20 minutes.  All liquids should be absorbed and rice should be tender.
