Chicken Caesar Salad

Today this recipe was made by special request from my family, Chicken Caesar Salad, one of their absolute favourites.

Caesar salad was originally created by an Italian immigrant Caesar Cardini. The earliest documentation of this very popular recipe was in 1946. There are many different variations of this recipe, some of which include anchovies and raw egg yolk. Here is my simple recipe:














Ingredients:

Croutons:

1-2 slices thick crusty bread cut into large cubes
Drizzle of Bertolli olive oil
Sprinkle of Clubhouse Oregano
Salt and pepper to taste

Chicken:

3 chicken breasts
1 tbsp Bertolli olive oil
1/4 cup wine of your choice
Salt and pepper to taste

Salad:

2 cloves garlic minced
1 tsp Dijon mustard
2 tbsp balsamic vinegar
3/4 cup mayonaise
1/4 Bertolli olive oil
1 tbsp lemon juice
1/4 grated Parmigiano Reggiano cheese
3 strips cooked minced bacon
2 heads Romaine lettuce
Salt and pepper to taste

Method:

Place chicken breasts in pan with olive oil browning each side. Add salt, pepper and wine and cook on medium to low heat until done. Cut chicken into 2 inch strips and set aside.


Preheat oven to broil. Place cubed bread into baking pan adding olive oil, oregano, salt and pepper and cook for about 5 minutes keeping a close eye on them so that they do not burn. Once done remove and set aside.


Tear lettuce into 1 inch pieces and place in large bowl. Add croutons, bacon, chicken and cheese. For the dressing whisk together garlic, mustard, vinegar, olive oil, mayonaise, lemon juice, salt and pepper until well blended. Add dressing and toss.
