Minestrone

Minestrone, such a warming dish for this time of year. It is a dish that can be found in many parts of Italy, but each region has it's own style. It can be served with or without pasta, tubettini pasta is my preferred choice to use with this recipe, however today I made it without because I wanted something warm but without additional starch.

Ingredients:

1/4 cup minced white onion
3 cloves minced garlic
1/2 cup chopped carrots
1 cup Unico white kidney beans
1/2 cup chopped arugula
1/2 cup chopped cauliflower
1/2 cup diced zucchini
1/2 cup chopped celery
3 tbsp my tomato sauce - see previous blog
2 tbsp Bertolli olive oil
1 Knorr Homestyle Bouillon Stock - Chicken
1-2 cups of water


Method:

In a saucepan add oil, garlic and onions, cook until aromas start to flow. Add carrots, arugula, cauliflower, zucchini, celery and cook together on medium heat for about 5 minutes. Add beans, tomato sauce, stock and water.  Bring to a boil, cover and simmer on low heat for 20 minutes. Serve with bread for dipping or include tubetti pasta.
