Meatball Soup




I put this recipe together this morning... It tasted amazing. I ended up making a large batch for freezing into potions for lunch.

Ingredients:

Cubed vegetables:
2 small potatoes
1/2 onion
1 cup carrots 
1/2 zucchini
2 large mushrooms

Other:
2 handfuls of baby arugula & spinach
1 can of Lentils 
2 cups mini meatballs (Meatball Recipe)
6 cups water 
3 tbsp olive oil
Knorr instant stalk mix to taste
Sprinkle of red pepper flakes
Sprinkle of parsley

Method:

Place cubed vegetables, baby arugula & spinach and lentils in a pot. Add water, olive oil and Knorr instant stalk mix.  Bring to a gentle boil and add meatballs, red pepper flakes and parsley.

Cook for a couple of hours on low heat and stir occasionally.
