Cranberry and Pistachio Spice Bars


This recipe reminds me of the old fashioned hermit cookies with a new twist!

Preparation time: 15 minutes
Baking time: 17 minutes
Yield: 40 - 50 bars/cookies

Ingredients:

1 cup Becel margarine
2 1/4 cup brown sugar
3 eggs
1/4 cup honey
4 1/4 cups flour
1 1/2 tsp Magic baking powder
1 1/2 tsp Arm and Hammer baking soda
1 1/2 tsp Clubhouse cinnamon
1 tsp Clubhouse ground cloves
1 tsp Clubhouse ground nutmeg
1 cup cranberries
1 cup pistachios
1 egg lightly beaten

Method:

Cream margarine and brown sugar on medium speed until well blended. Add eggs and honey, blending until light and smooth. In a separate bowl combine flour, baking powder, baking soda and spices. Stir into creamed mixture. Add cranberries and pistachios just until blended, dough should be soft.

Shape dough on greased baking sheets forming six 1/2 inch high logs. Brush with egg and bake at 375 for 17 minutes. Cool, then slice diagonally into bars.
