Frittata

Frittata is an egg based recipe that is similar to quiche. It is an Italian recipe that could include meat, cheese, vegetables and herbs. The recipe I am sharing today includes cheese, onions and herbs.


Ingredients:

7 eggs
1/2 cup bread crumbs
1/2 cup Parmigiano Reggiano Cheese
1/4 cup diced green onion
2 tbsp chopped fresh parsley
Salt and pepper to taste

Method:

Combine all ingredients and place in a gently oiled frying pan. Cover and cook on medium heat for a few minutes or until top of frittata looks no longer wet. Take a large plate and put over pan. Flip frittata into plate so cooked side is now upright. Place frittata back in pan to finish cooking for a few minutes. Slice into pizza shaped pieces and serve.

Serves 4 - 5
