Ricotta and Spinach Stuffed Pasta Shells


This is a delicious pasta recipe that is filled with creamy ricotta cheese and spinach which makes for a wonderful first dish.

Ingredients:

1 box of Unico large pasta shells
450 g Bari ricotta
1 1/2 cups chopped cooked spinach
1 egg
3/4 cup Parmigiano Reggiano cheese
Tomato sauce (see previous blog for recipe)
1tbsp salt
1tbsp Bertolli olive oil
Salt and pepper to taste

Method:

Cook pasta shells in salted water and olive oil according to directions on box. In the meantime, mix ricotta, spinach, egg, 1/2 cup parmigiano cheese, salt and pepper. When shells are done, drain and set aside. Line bottom of baking dish with sauce. Fill shells with one heaping teaspoon of the ricotta mixture and place on sauce in baking dish. Add more sauce to top of shells and sprinkle with remaining parmigiano cheese. Cook for about 45 minutes until pasta is fully cooked. Once done, let stand for 5-10 minutes before serving.
