Grilled Eggplant with Garlic Vinaigrette


It is the first day of spring today, and with that I was inspired to grill something on the BBQ, I chose the ever so wonderful eggplant.

Ingredients:

3 medium sized eggplant
1 minced clove garlic
1/4 cup balsamic vinegar
1 1/2 tbsp minced parsley
1/4 cup olive oil
Salt and pepper to taste

Method:

Slice eggplant lengthwise and place on grill. Cook eggplant about 7 minutes on each side. For criss cross marks, cook on each side, turn over and then rotate. Total cooking time should be about 15 minutes. Slice eggplant lengthwise into thin slices and place in bowl. Add olive oil, balsamic vinegar, parsley, garlic, salt and pepper.  Toss and serve.
