Spaghetti with Tomato Sauce and Green Beans


This is a very simple and fresh recipe. The colors of this dish represent good italian cooking with authentic flavors of the earth, using fresh garlic and green beans. The cheese that is best suited for topping this recipe is hardened salted ricotta cheese, but parmigiano reggiano or romano can be used also.

Ingredients:

250 g spaghetti
400 g crushed tomatoes
1 1/2 cups green beans, ends removed
3 minced cloves garlic
1 tbsp olive oil
3 basil leaves
1/2 cup red wine
1 - 1 1/2 cups of water
1/2 tsp sugar
Salt and pepper to taste

Method:

On medium heat, sauté garlic and green beans in olive oil for a few minutes, add wine and cook for a few minutes longer. Add crushed tomatoes, basil, sugar, water, salt and pepper. Bring to a boil and reduce heat, let cook for at least one hour. In the meantime cook spaghetti according to package and drain. Add a bit of the sauce and mix in with the spaghetti. Plate with a little extra sauce and a sprinkle of cheese.

Serves 2 - 3
