Japanese Stir Fry with Chuka Soba Noodles


Chuka soba noodles are used in this recipe, these noodles are long and thin. I also used boneless chicken and a variety of vegetables.

Ingredients:

3 chicken breasts cut into 1 inch pieces
1 cup broccoli
1 cup sliced mushrooms
1 cup cauliflower
1 sliced red bell pepper
1/2 sliced red onion
300 g Chuka soba noodles
3 green onions sliced
1 tbsp olive oil
11/2 tbsp rice vinegar
1 tbsp soya sauce
1/2 tsp ginger
1 1/2 cups water
1 tsp corn starch

Method:

Heat olive oil in a pan, add chicken and cook on medium heat until golden brown. Add rice vinegar and cook for a few minutes longer.  In the meantime, bring a cup of water to boil in a pan, add noodles and cook covered according to package with the green onions.

Add vegetables, soya sauce, remaining water, cornstarch and ginger to the chicken, cook until sauce has thickened. Serve over noodles with a few green onion slices.

Serves 5
