Mini Brioche - Recipe 1


Brioche are a french pastry that are typically eaten in Italy for breakfast, accompanied by a latte or cappuccino, these are absolutely amazing.

Ingredients:

Dough:

1 1/3 cups warm milk
2 tsp active dry yeast
2 tbsp butter
2/3 cups sugar
2 eggs
5 cups flour
1 pinch nutmeg
1 tsp salt

Topping:

1/2 cup melted butter
1 cup sugar
1 tbsp sugar

Method:

Place 1/3 cup of warm milk in a bowl and stir in yeast, set aside until yeast rises. Pour remaining cup of milk into a large bowl and add yeast mixture, butter and sugar.  Stir in eggs flour, nutmeg and salt. The dough should pull away from the bowl. Remove and place on flat surface, kneed into a ball. Place dough back in bowl, cover and let rise for 1 hour.

Roll dough about 1/2 inch thick and cut circles using a small glass or cup. Place on prepared baking sheet and let rise for about 45 minutes. Bake at 375 for about 10 minutes or until golden brown. Remove from oven and let cool for a few minutes. Place melted butter in a small bow. Mix cinnamon and sugar in another bowl. Dip each brioche into the butter and then into the sugar and cinnamon mixture.
