Whole Wheat Pretzels


I got home from work today and the house smelled of baking. My daughter was making pretzels, wow what a nice treat. So I thought I would share our pretzel recipe with you today.  These pretzels do not take very long to make, only about 30 minutes.

Ingredients:

625 ml flour
10 ml sugar
2 ml salt
15 ml instant yeast
375 ml warm water
250 ml whole wheat flour
1 egg
15 ml cold water
25 ml course salt

Method:

Mix flour, sugar, salt and yeast in a bowl. Stir in water and mix until flour is moistened. Add whole wheat flour and mix until dough forms a ball.  Kneed dough on a floured surface until smooth. Cover dough and let rest for about 10 minutes.

Punch dough down and divide in two. Cut each half into six equal portions. Roll each portion into a 30 cm cylinder. Place on a greased baking sheet and bring right end of cylinder and over the first loop to form a pretzel.

Place pretzels about 10 cm apart to allow for room when rising in the oven. Mix egg and cold water and brush over pretzels. Sprinkle with salt and bake at 425 for 15-20 minutes.
