Greek Pasta Salad


This colourful pasta salad with tastes from the Mediterranean is a great side dish to accompany a summer barbecue. It is very refreshing and keeps well for the next day.

Ingredients:

1 package of Barilla Farfalle pasta
5 diced roma tomatoes
1/2 diced red onion
1 can sliced black olives
3 diced mini cucumbers
1 cup cubed feta cheese
3 large basil leaves finely chopped
Juice from half a lemon
3-4 tbsp olive oil

Method:

Bring a large pot of salted water to boil and cook the farfalle until al dente, drain and set aside. In a large bowl mix together the tomatoes, onions, olives, cucumbers and cheese. Once pasta has fully cooled, at to veggie mixture. Add feta cheese, lemon juice and olive oil and stir until all is combined.

Serves 5 - 6
