Spaghetti ai Frutti di Mare


This is an awesome recipe that my mother shared with me years ago. In Puglia, Italy, this is one of their most popular dishes as all of the ingredients can be bought fresh right from the fisherman's hands.

Ingredients:

1/2 pound whole black mussels
1/2 pound whole clams
1/2 pound shelled shrimp
1/2 pound calamari rings
500 gr. spaghetti
796 ml can crushed tomatoes
5 cherry tomatoes cubed
1/2 can water
2 tbsp olive oil
4-5 garlic cloves minced
3 tbsp chopped parsley
3/4 tbsp salt
3/4 tbsp sugar
pepper to taste


Method:


Wash mussels and clams well, ensuring that their shell surface is scrubbed free of any sea residue and set them aside. Soak shrimp and ensure they are clean and deveined but leaving shells on.  Depending on the calamari rings you purchase, they should be cleaned well also.


To prepare the sauce, add olive oil and half of the garlic to a frying pan and cook for a few minus. Add cubed tomatoes, crushed tomatoes, half of the parsley, salt, pepper, sugar and 1/4 cup of water. Bring sauce to boil, reduce heat and cook for about 10 minutes.


In the meantime, in another pot, add garlic to the olive oil and let cook for a few minutes. Add mussels and clams, secure pot with lid. This will steam the mussels and clams and will ensure that they have opened, discard any un-opened ones. Add parsley and the salt and pepper to taste. Remove from heat.

Add shrimp and calami tomato sauce and cook for a few minutes. Add mussels and clams and let everything cook together for a few minutes longer.

Drain pasta and add a bit of the sauce. Plate spaghetti adding some of the shellfish and sauce on top with a sprinkle of parsley.

Serves 5 - 6
