Meatballs with Cheese Sauce

I made these meatballs the other day and served them with a side of roasted potatoes. They were so good:)

Ingredients:

Meatballs:
1.5 Pounds Ground Pork
1/4 White Onion Chopped
1/2 Red Bell Pepper Chopped
1 Egg
1/4 Cup Breadcrumbs
1/4 Cup Parmiggiano Cheese Grated
1/4 Cup Swiss Cheese Grated
1 Tbsp. Dry Parsley
Pinch Salt and Pepper

Sauce:
2 Tbsp. Butter
1 Tbsp. Flour
1 Cup Milk
1/2 Cup Cheddar Cheese Grated
1/2 Cup Swiss Cheese Grated
Pinch Salt and Pepper
Sprinkle of Dry Parsley

Method:
In a bowl mix all ingredients for together the meatballs. Shape meatballs using about a tbsp. per meatball. Bake at 425 for 30 minutes turning over in between.

While the meatballs are cooking, melt the butter in a pan. Add the flour and cook for a minute or so. Whisk in the milk and bring to a boil. Add the cheese, salt, pepper and parsley. Reduce heat and cook until thickened.
Once meatballs are cooked, place in bowl and drizzle with the cheese sauce.

Serves 6
