Baked Salmon with Garlic Sauce

We purchased some lovely fresh salmon at Costco on the weekend and made four salmon steaks for dinner tonight. The salmon was accompanied by lemon broccoli and baked potatoes.

Ingredients for marinade:

2 tbsp Bertolli olive oil
Salt and pepper to taste
1/2 squeezed lemon
Sprinkle of Clubhouse dill

Salmon should be marinated for at least one hour. Once the steaks are ready to cook, place them in a baking dish with the marinade and cook at 400 for 20 minutes. Remove and let stand 5 minutes before plating.

Ingredients for garlic sauce:

2 tbsp butter
2 tbsp flour
1/2 tsp Clubhouse garlic powder
1 egg yolk
1/2 cup milk or cream
1/2 tsp Clubhouse dill
salt and pepper to taste

Method:

Melt butter in sauce pan on medium heat.  Add flour and whisk vigorously until all flour is absorbed.  Add milk and egg yolk while still using whisk.  Add garlic powder, dill, salt and pepper and cook for about 10 minutes on low heat.  Serve over salmon.
