Hamburgers with Fresh Tomato Relish

I try and keep my family away from junk food, but every once and a while they crave it, so years ago I introduced them to a better burger, homemade, and they love them. Typically I would BBQ them, but that is a bit hard to do in the winter, so tonight's burgers were baked, they are awesome!

Hamburgers:


Ingredients:

680 g ground pork
1/4 cup breadcrumbs
1 tbsp chopped parsley
1/4 cup BBQ sauce
Salt and pepper to taste


Method:


Mix ingredients together forming a loaf. Divide loaf into six portions. Roll each portion into a ball and flatten with hands. Place in baking pan and cook in the oven at 375 for about a half hour, turning them over in between.


Tomato Relish:


Ingredients:


4 small tomatoes
1/4 cup chopped green onion
2 chopped basil leaves
1 tsp Unico red wine vinegar
1 tbsp Bertolli olive oil
Salt and pepper to taste


Method:


Cube tomatoes and place in bowl. Add green onion, basil, vinegar, olive oil and the salt and pepper. Mix together and let stand for a half our. Serve over hamburgers with baby romaine and cheese.
