Bell Pepper and Dill Soup


On a cold day like today, I felt like having something warm and satisfying. I had some bell peppers in the fridge so decided to make my Bell Pepper and Dill Soup. I used a mix of peppers for this soup, red, yellow and orange. As always it was absolutley enjoyable.

Ingredients:

4 chopped bell peppers
1 cubed potato
1/2 minced red onion
2 minced cloves garlic
1 tsp Bertoli olive oil
1/2 tsp Clubhouse Dill
1 pinch Clubhouse Red Pepper flakes
1 cup Knorr vegetable broth

Method,

Place peppers, onions, potatoes, garlic, dill and pepper flakes in a pot with olive oil, stirring now and then. Cover and cook on minimum heat for about a half hour. Place in blender and strain through meshed collander. Place back into pot with vegetable broth. Heat for a few minutes longer and serve with a sprinkle of dill and swirl of cream.
