Warm Potato Salad


This is a potato salad recipe that is served warm with a red wine vinaigrette. It can also be made ahead of time and served cold.

Ingredients:

5 medium potatoes
1/2 minced red onion
3 eggs
5 chopped slices of bacon
Spinach
1 tbsp chopped parsley
1/4 cup olive oil
1/4 cup of wine vinegar
Salt and Pepper to taste

Method:

Boil potatoes in salted water. In another pot boil eggs for about 10 minutes. In the meantime add onion bacon and parsley in a large bowl. Once potatoes are done, drain water and let stand for 5 minutes. Cut potatoes into cubes and add to large bowl. Peel eggs, chop, add to bowl also. Add oil, vinegar, salt and pepper. Mix and serve over a bed of spinach.
