Cime di Rape Stufate


Cime di Rape are a vegetable from europe. The are a type of broccoli called "raab", and they are absolutely delicious. In Puglia, this Cime di Rape Stufate recipe is very popular and easy to make too.

Ingredients:

1 bunch of cime di rape
1/2 - 1 cup of water
2 tbsp olive oil
2 - 3 bay leaves
2 minced cloves of garlic
1/2 tsp red peeper flakes
Salt to taste

Method:

Rinse cime di rape very well and leave in colander for a bit. In a frying pan heat water until it boils. Remove the cime di rape from the colander and cut off stems. Place in water and cover with lid, cook on medium heat until tender. Add olive oil, bay leaves, garlic, red pepper flakes, salt and cook for a few minutes longer. Plate with a drizzle of olive oil. These are delicious, especially when served with home made crusty bread.
